Ok, its winter and we have plenty more to go. Time to settle in and enjoy it. One of the best ways to enjoy winter is with a great cup of soup. Here is an easy one pot meal that is both rich and creamy as well as healthy and hearty. This is a great quick meal to keep you warm on even those coldest of winter days. Give it a try!
2 Tbsp butter
1 cup finely chopped onion
1 clove minced garlic
1 cup thinly sliced carrots
4 cups chicken or vegetable broth
3 cups broccoli florets
3 cups cauliflower florets
2 cups half and half
4 Tbsp flour
2-3 cups extra sharp cheddar, grated
dash of pepper & salt to taste
In a large pot over medium heat, sauté onion, garlic and carrots in butter until onions are tender. About 5 minutes.
Then add broth, broccoli, and cauliflower. Cover and cook until broccoli and cauliflower is al dente. About 10 minutes.
In a small bowl, whisk together half and half and flour. Add to veggie mixture along with cheese, salt and pepper. Stir until cheese is melted and soup begins to thicken.
